Im not sure why, but I had the biggest craving for fresh rolls last night. I lay in bed unable to sleep, and I began to think about how I could make these rolls even healthier than they already are. I decided that I would ditch the vermicelli noodles, and add boiled pulled chicken, instead of my normal pan fry style. This morning I set out to the grocery store to load up on the perfect ingredients for my rolls and ended up with some cabbage, cucumbers, chicken breast, avocado, lime and lots of fresh cilantro. I was worried that boiling the chicken would make it a little bland, so after I pulled it apart I doused it in some fresh lime for extra flavour. Needless to say, the wraps turned out, fresh, zesty and light. I paired it along side my go-to dipping sauce, which has a bit of hoisin, peanut butter, a splash of hot water and sriracha, and I ended up with a happy tummy 🙂 Try cutting out the vermicelli noodles the next time you make fresh rolls, I think you will be pleasantly surprised by how little you miss them!
